A giant member of the parsley family, Angelica grows up to 1.5 m high, with spread of about 90 cm. It is native both to northern Europe and to Syria, and grows wild in many parts of the world. Decorating the countryside with its bright green shoots of tree like proportions.
In ancient times the plant was believed to ward off evil spirits, and was used at pagan festivals. Its later associationrnwith angels, in its botanical name and in many European languages, is thought to derive from the fact that it came into flower on or around 8 may, the feast day of St Micheal the Archangel.
The whole plant is pleasantly aromatic. It has a large fleshy roots that can weigh up to 1.3 g and thick, sturdy and hollow stems that are purple at the base, shading to bright and light green. The plant reaches a height of 1.5 m and the huge leaves, made up of three leaflets, are bright green and finely toothed. The flowers which appear in mid to late summer, are small and yellowish green in colour, forming umbrella-like clusters.
Sharp, green, herbaceous odour with peppery top notes.
Pale yellow to orange brown colored liquid.
